Now the next step in the experiment is to do the same kind of thing... but with a HARD cheese like Parmesan. The hard cheeses don't normally melt like the softer cheeses do... but the sodium citrate will allow the Parm to melt and get smooth.
Oh, and to make a thinner slice? Simply pour off the excess from the heated pan as soon as you've got full coverage.
