I also practice kendo and I too love the economy and realism of Kurosawa's fight scenes. I feel like they are very clearly made for a Japanese audience, a large percentage of whom would have practiced kendo in PE as children and know what a really scary opponent looks like - not jumping around or doing flourishes or monologuing - just absolutely calm and ready to cut you down before you even raise to block their strike.
